BBQ Chicken Summer Salad

As summer approaches – the urge to eat a bit healthier, a bit lighter, can strike.  Basically, salads start looking really good and the epic roast’s not so much.  The salad in the pic above is absolutely incredible and is absolutely light, healthy and perfect for a balanced and fitness orientated diet.

We thought we might throw some resources your way to look up some cheap, cost-effective and easy to cook up recipes for meals this summer.  Of course – we wouldn’t just go hunting any old website, we’ve actually used all of these and can definitely recommend ALL of these as fun, interesting to cook with friends and there are definitely LOTS of healthy options……and some great cheeky ones too.  By the way – we don’t particularly follow any “style” of diet, but being very active people at A.I.P, we do stay VERY light and healthy (we eat LOTS of fruit and veg), and tend to stick to poultry and fish as our meats. We also drink lots of water, and almost no sugared drinks, no juice, no soft drinks, very little alcohol (amazing how much you stop craving it after a while).  Not a hard and fast rule, but it works for us.  The recipe for the salad above is down below too!

BBQ Chicken Salad Recipe

Servings SERVES: 4Preparation time PREP: 20 min.Cooking time COOK: 10 min.


  • 2 boneless skinless chicken breasts, sliced into strips;
  • 6 cups romaine lettuce, chopped;
  • 1 Roma tomato, diced;
  • 1 bell pepper, cut into small pieces;
  • ½ avocado, cut into cubes;
  • ¼ cup red onion, diced;
  • ¼ cup BBQ sauce;
  • Cooking fat;
  • Sea salt and freshly ground black pepper;

Ingredients for the ranch dressing

  • 2 tbsp. homemade mayonnaise;
  • 2 tbsp. coconut milk;
  • ¼ tsp. raw garlic, minced;
  • 1 tsp. fresh dill, minced;
  • 1 tsp. fresh chives, minced;
  • ¼ tsp. paprika;
  • Sea salt and freshly ground black pepper;
Chicken salad preparation


  1. Add some cooking fat to a skillet placed over medium-high heat.
  2. Season the chicken breasts with sea salt and black pepper to taste.
  3. Add the chicken to the skillet and cook for 3 to 4 minutes per side, until cooked through.
  4. Wait until the chicken is cools down; then dice it into bite-sized pieces.
  5. In a bowl, combine all the ingredients for the ranch dressing and mix well.
  6. Fill a salad bowl with the romaine lettuce. Top with the chicken, tomato, pepper, onion, and avocado.
  7. Pour the ranch dressing and BBQ sauce on top of the salad. Toss gently to combine and serve.
